Founded more than eight centuries ago by King Saint Louis as a port from which the crusaders could set sail, Aigues-Mortes is a historic jewel, between the sea and lagoons. The town was restored in the 19th century and remains much the same today- walls encircle the city and the fortifications are some of the most well preserved in France. Inside the walls one finds numerous restaurants, cafes, boutiques and art galleries. There is a weekly market for fresh local produce. As for the Camargue, it is one of France�s most atypical, mysterious and wildest areas, offering unparalleled natural beauty over 900 square kilometres. The territory is a vast stretch of wetlands, marshes and dunes, rich in fauna and flora, including pink flamingos, the famous Camargue horses and their horseback guardians (real life cowboys), semi-wild bulls and many hundreds of bird species.

Activities
Aigues Mortes is a bustling place. Guided tours are available of the fortifications, museums and old streets, with stops possible for wine tasting. During September and October, there is a local festival to celebrate the lifestyle of the guardians, with horse riding displays and bull running through the town. There are a multitude of different activities on offer in the area, due to the plethora of landscapes. The sea offers sailing, kayaking, diving, jet skiing, fishing and kite surfing as well as volley ball and dune buggying on the beaches. One of the best in the Languedoc, L�Espiguette has 26kms of unspoilt, undeveloped sandy beach. One must of course discover the Camargue, and this is possible on horseback, in a safari jeep or by bike.

Local food and gastronomy
The three major locally produced foods include (red) rice, salt and beef. Thus beef stews are popular (boeuf en daube or gardiane are slow cooked stews in red wine) as of course is seafood. Aioli and anchoiade are also popular, which use garlic, olives and anchovies. Languedoc-Roussillon is the largest wine producing region in France, with excellent vineyards open for you to taste and sample local produce.
