Typical desserts include rioutes (aniseed biscuits), tarte aux myrtilles (bilbery tart) and Bugnes (fried pastry, similar to beignets). The local cheese is Beaufort, a hard sharp cheese quite similar to gruyere and comté, uniquely flavoured due to the altitude at which it is produced.
