There are ski resorts in Aude (depending on snow fall) in Mijanes approx 1/2 hours drive away. But the best skiing is in Andorra approx 2hours drive. There are plenty of parc naturel within easy driving between less than1 hour to up to 2hours.

For coastal/seaside trips: Canet Plage or St Cyprien plage near Perpignan. Towards Narbonne - Le Bacares or Cap Leucate. good motorway roads to each or through the mountains.
